Can someone please explain to me what and what not can the Jewish Orthodox do?

i am very curious about them. Because i've heard that they cannot use anything which is electronic, if the spous is on their menstraul period they have to be seperate for 12 days and so on. please can you give me some more info of things they can or cannot so?
